fixed the link previews' text encoding.
also switched from the HTML4 \DOMDocument to the HTML5 \Dom\HTMLDocument, because the documentation for the former was plastered with warnings and i figured "why not".

i remember wanting to use the new htmldocument way back when i was originally writing it but i didnt because i couldnt get php 8.4 on my server yet lol
above commit crashes if og:url is missing from page (treats me right for testing with youtube dot com), below linked commit fixes that regression.

Add missing fallback for LinkPreview og:url
Also, I noticed linkpreviews federate-- only the post's home instance generates a linkpreview and i think that's neat. that's what https://digitigrade.xn--80andq.net/@/nancy@nancy.ignorelist.com/note/1363 was testing, my ability to add a - test to the linkpreview title locally and have it federate.
